If you want to go all "molecular" with your cookery then look at infusions4chefs, based in Rougham, Suffolk for your ingredients.  I bought a Sosa Candy Floss aroma to use in a food trends workshop that I was running.  Now my car smells like a sweet shop.

    You can use as a flavour or aroma Rob. I sprayed it into the air so that when people walked into the room they wondered what the smell was. Just to get people thinking about smell.

    I love the smell of candy floss - how do you use this ingredient? or is it just like an aromatherapy oil to make the room smell like a night at the funfair?
